Grate the apples into a bowl.
In a pan, melt 1 tablespoon of butter, then add the grated apples, sugar, and cinnamon.
Cook for about 2–3 minutes until the apples soften and release their juices. Set aside to cool slightly.
Make the Custard:
In a saucepan, whisk together the egg, sugar, cornstarch, vanilla sugar, and milk.
Heat over medium heat, whisking continuously until the mixture thickens into a custard-like consistency. Remove from heat and stir in 1 teaspoon of butter for extra creaminess.
Assemble the Dessert:
Roll out the puff pastry sheets and cut them into squares or rectangles.
Spoon a layer of the custard on each piece of pastry, then top with the apple mixture.
Fold the pastry over to form a parcel and seal the edges.
Mix the egg yolk with the milk and brush it over the pastry for a golden finish.
Sprinkle with sliced almonds and a dusting of soft sugar.
Bake:
Preheat the oven to 375°F (190°C) and bake for 12–15 minutes, or until golden and puffed.
