No-Sugar Apple Carrot Oat Muffins – Naturally Sweet and Flour-Free

Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.

In a bowl, combine ground oats and baking powder.

In another bowl, whisk the eggs, then add milk, grated carrot, apple, apricots, raisins, and cinnamon.

Add the dry oat mix into the wet mixture and stir until just combined.

Let the mixture sit for 5 minutes to absorb the liquid.

Divide the batter evenly into the muffin cups.

Bake for 25–30 minutes or until golden and firm to the touch.

Cool before serving.
