Preheat the oven to 170°C (340°F). Butter and flour a round cake pan (20–22 cm).
Cream butter and sugar until pale and fluffy (about 3–5 minutes).
Add eggs one at a time, beating well after each.
Stir in vanilla and citrus zest (if using).
Sift flour, baking powder, and salt together. Gradually fold into the wet ingredients.
Pour batter into prepared pan and smooth the top.
Bake for 40–45 minutes or until golden and a toothpick comes out clean.
Cool in the pan 10 minutes, then transfer to a rack.
Dust with powdered sugar before serving.
