Preheat your oven to 180°C (356°F). Grease and flour a round or rectangular baking dish.
Whisk the eggs with a pinch of salt until frothy. Gradually add the sugar and continue beating until pale and thick.
Add the wet ingredients: Pour in the oil and milk, mixing until well combined.
Sift together the flour and baking powder, then add it gradually to the batter. Stir until smooth.
Pour the batter into the prepared baking dish. Gently place the apple slices on top (or fold some into the batter for extra moisture).
Bake for 35–40 minutes, or until a toothpick comes out clean. Let cool slightly before slicing.
