In a bowl, mix flour, salt, and baking powder. Add cold butter and rub into the flour with your fingers until crumbly.
Add Yogurt:
Mix in the yogurt or sour cream until a soft dough forms. Do not over-knead.
Chill:
Wrap the dough and refrigerate for 20–30 minutes.
Roll and Fold:
Roll the dough into a rectangle. Fold it like a letter (top to center, bottom to center). Turn it and repeat once more. This creates layers.
Shape and Fill:
Roll out again and cut into squares or circles. Add a spoonful of your chosen filling and seal edges or fold over.
Bake:
Place on a baking tray, brush with beaten egg, and bake at 200°C (392°F) for 20–25 minutes or until golden brown.
