Ingredients:
For the biga (starter):

100 g all-purpose flour (type 00)

95 g water

10 g fresh brewer’s yeast

For the dough:

All of the biga

300 g flour 00

130 ml water

40 g sugar

6 g salt

250 g raisins (pre-soaked in warm water for 20 minutes and drained)

20 g olive oil
