Prepare the Marinade: In a bowl, whisk together tamari, olive oil, lemon juice, garlic, and all the spices.
Marinate the Meat: Add steak cubes to the marinade. Toss to coat well. Cover and refrigerate for at least 1 hour (up to 8 hours for deeper flavor).
Assemble the Kebabs: Thread steak, bell peppers, and onion onto skewers, alternating pieces.
Preheat the Grill: Heat grill to medium-high and lightly oil the grates.
Grill: Place kebabs on the grill. Cook for 8–10 minutes, turning occasionally, until the steak is nicely charred and cooked to your preferred doneness.
Serve: Let kebabs rest for a few minutes before serving with couscous, rice, or flatbread.
