Gluten-Free Oat, Apple, and Raisin Bars

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.

Prepare the Wet Ingredients: In a large bowl, whisk together the eggs, honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.

Combine Dry Ingredients: In another bowl, mix the rolled oats, cinnamon, baking soda, and salt.

Mix Together: Add the wet ingredients to the dry ingredients and stir until fully combined. Gently fold in the diced apples and raisins.

Bake: Pour the mixture into the prepared baking pan and press it down evenly. Bake for 25-30 minutes or until the bars are golden brown and firm to the touch.

Cool and Slice: Let the bars cool in the pan for 10 minutes before transferring them to a wire rack to cool completely. Once cooled, slice them into squares or bars.
