Line an 8x8 inch square baking pan with parchment paper or foil.
In a saucepan over low heat, melt the white chocolate chips with the sweetened condensed milk, stirring constantly until smooth.
Remove from heat and stir in vanilla extract and a pinch of salt.
Fold in the chopped red and green candied cherries (and nuts if using).
Pour the mixture into the prepared pan and smooth the top.
Refrigerate for at least 2 hours or until firm.
Once set, lift the fudge from the pan and cut into small squares.
