In a bowl, whisk together the eggs, salt, and pepper until smooth.
Cook the Vegetables:
In a large pan, heat ½ tablespoon butter over medium heat.
Add the onion, bell pepper, celery, and carrot. Cook until soft, about 5–7 minutes.
Add the zucchini slices and garlic, and cook for another 2-3 minutes until the zucchini softens slightly.
Add the tomato, corn, and spring onions, and stir to combine. Let everything cook together for 2 minutes.
Add Cheese and Sour Cream:
Lower the heat and stir in the grated cheese and mozzarella until melted and smooth.
Stir in the sour cream and Dijon mustard. Taste and adjust the seasoning with salt and pepper.
