Ingredients:
For the Egg Custard:

2 large eggs

½ teaspoon salt, plus more for seasoning

¼ teaspoon freshly ground black pepper, plus more to taste

For the Vegetable Filling:

1 medium zucchini, sliced into ¼″ rounds

1 tablespoon butter, divided

1 medium onion, finely chopped

1 red bell pepper, diced

1 stalk celery, thinly sliced

1 medium carrot, peeled and diced

2–3 spring onions, thinly sliced (white and green parts)

60 g (2 oz) canned corn, drained

1 medium tomato, diced

100 g (3.5 oz) grated cheese (cheddar, Gruyère, or your choice)

40 g (1.4 oz) mozzarella, shredded

5 tablespoons (80 g) sour cream

2 tablespoons (30 g) Dijon mustard

1 small cucumber, thinly sliced

2 garlic cloves, minced

A handful of fresh arugula, to garnish

Fresh parsley, chopped, for garnish
