Delicious Butter and Walnut Meringue Cookies

In a bowl, beat the softened butter and powdered sugar until creamy.

Add egg yolks and vanilla extract, then mix well.

Gradually add flour until a soft, non-sticky dough forms.

Roll the dough out to ½ cm thickness and cut into shapes or squares. Place on a baking tray lined with parchment paper.

Make the Meringue:

In a clean bowl, whisk egg whites until soft peaks form.

Gradually add granulated sugar and beat until stiff peaks form.

Gently fold in the chopped walnuts.

Assemble and Bake:

Spoon or pipe the meringue onto each cookie base.

Bake at 160°C (320°F) for 18–20 minutes or until lightly golden.

Let cool on a rack before serving.
