Mash the boiled potatoes in a large bowl until smooth.
Add egg, cornstarch, salt, pepper, paprika, herbs, and mix well.
Stir in cheese and combine into a soft, moldable dough.
Shape into small patties or balls.
Pan-fry in oil until golden brown on both sides, or bake at 200°C (400°F) for 20–25 minutes, flipping halfway.
Serve warm with dipping sauce or salad.
