Prepare the Oven and Noodles:
Preheat your oven to 375°F (190°C). Cook lasagna noodles as directed on the package. Drain and lay them flat on parchment paper to avoid sticking.
Sauté the Spinach:
Heat olive oil in a skillet over medium heat. Add chopped spinach and cook for 2–3 minutes, until wilted. Set aside to cool slightly.
Make the Filling:
In a mixing bowl, stir together ricotta, mozzarella, Parmesan, egg, sautéed spinach, dried basil, salt, and pepper until well combined.
Assemble the Rolls:
Spread a thin layer of marinara sauce in the bottom of a baking dish. Spread ¼ cup of filling onto each noodle, roll tightly, and place seam-side down in the dish.
Add Sauce and Cheese:
Pour the remaining marinara sauce over the rolls and top with leftover mozzarella and Parmesan cheese.
Bake:
Cover with foil and bake for 25 minutes. Remove foil and bake another 10 minutes until cheese is golden and bubbling.
Cool and Serve:
Let the rolls rest for 5 minutes before serving.
