In a bowl, mix flour and sugar. Add butter and rub into the flour until crumbly.
Mix in egg yolk and cold water to form a dough.
Wrap in plastic and chill for 30 minutes.
Roll out the dough and press into a 9-inch tart pan. Prick the bottom with a fork.
Bake at 180°C (350°F) for 15 minutes. Let it cool slightly.
Make the Filling:
In a bowl, beat cream cheese and sugar until smooth.
Add egg, vanilla, sour cream, and lemon juice. Mix until creamy.
Assemble and Bake:
Pour the cheesecake mixture into the pre-baked tart shell.
Bake at 160°C (320°F) for 25–30 minutes, or until the center is just set.
Let it cool completely, then chill for at least 2 hours before serving.
