Ingredients
1 kg (2.2 lbs) waxy potatoes (e.g., Yukon Gold or red potatoes)

4 tablespoons wine vinegar (white or red)

100 ml (about 1/2 cup) extra virgin olive oil

1 tablespoon Dijon mustard

1 small shallot or red onion, finely chopped

2 tablespoons chopped fresh parsley

Salt and freshly ground black pepper, to taste

Optional: 1 tablespoon capers or chopped pickles for extra tang
