In a large bowl, combine the ground pork, ginger, garlic, soy sauce, sesame oil, and green onions. Season with salt and pepper and mix well.
Place a wonton wrapper on a clean surface. Add about 1 teaspoon of the filling in the center.
Brush the edges with the beaten egg, fold into a triangle or desired shape, and press the edges to seal.
To steam: place dumplings in a steamer over boiling water for 10–12 minutes.
To pan-fry: heat a little oil in a non-stick skillet, add dumplings, cook until bottoms are golden, then add a bit of water and cover to steam for 5–7 minutes.
To boil: gently place dumplings in boiling water and cook until they float, about 5–6 minutes.
