Chicken Bacon Ranch Potato Bake

Preheat the oven to 425°F (220°C). Grease a 9x13-inch baking dish with nonstick spray.

In a large bowl, mix the diced potatoes with salt, pepper, and ¼ cup ranch dressing.

Spread the potatoes into the prepared baking dish. Save the bowl for later use.

Bake the potatoes for 30 minutes, stirring every 10 minutes until nearly fork-tender.

Meanwhile, in the same bowl, mix the chicken cubes with salt, pepper, and the remaining ¼ cup ranch dressing.

After 30 minutes, lower oven temperature to 400°F (200°C).

Carefully remove the baking dish and add the marinated chicken on top of the potatoes.

Cover the dish with foil and return it to the oven. Bake for 20 minutes, or until chicken reaches 165°F (74°C).

Uncover and top with shredded cheese, bacon, and green onions.

Return to oven for another 8–10 minutes, until cheese is melted and bubbly.
