Blackened Salmon Delight with Creamy Spinach-Parmesan Filling

Preheat oven to 200°C (400°F).

Heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and spinach. Sauté until wilted. Let cool slightly.

In a bowl, mix sautéed spinach with cream cheese, Parmesan, salt, and pepper until smooth.

Slice a pocket into each salmon fillet, being careful not to cut all the way through.

Stuff each fillet with the spinach-Parmesan mixture.

In a small bowl, mix paprika, garlic powder, onion powder, cayenne, salt, and pepper. Rub this spice mix evenly over the salmon fillets.

Heat a skillet with olive oil over medium-high heat. Sear salmon 2–3 minutes per side until blackened.

Transfer to a baking dish and bake in the oven for 8–10 minutes, or until cooked through.
