Introduction

Ingredients
For the dough:
160 g water (lukewarm)
10 g sugar
18 g fresh yeast (or 6 g dry yeast)
300 g all-purpose flour
5 g salt
15 g olive oil
For the meat filling:
250 g ground beef or lamb
1 small onion, finely chopped
1 tomato, grated or finely chopped
1 green pepper, finely diced
1 tablespoon tomato paste
1 teaspoon paprika
½ teaspoon cumin
Salt and pepper to taste
1 tablespoon olive oil
Optional: chili flakes or fresh parsley
For brushing:
1 egg yolk (for shine)
1 tablespoon yogurt
Sesame seeds or nigella seeds (optional)
