Preheat the oven to 180°C (350°F).
In a bowl, toss sliced apples with lemon juice and sugar. Let sit for 20 minutes to release juices.
Meanwhile, prepare the tart dough by mixing flour and salt, then cutting in butter until crumbly. Add egg yolk and cold water, mixing until dough forms. Chill for 15 minutes.
Roll out the dough and press into a tart pan. Prick the bottom with a fork.
Layer the marinated apple slices over the base in a spiral pattern.
Sprinkle with cinnamon and optional brown sugar.
Bake for 35–40 minutes until golden brown and apples are tender.
Let cool slightly before serving.
