Prepare the vegetables: Dice the tomatoes and chop the spring onions.
Mix the batter: In a bowl, beat the eggs. Add tomatoes, spring onions, salt, and flour. Mix until combined. The mixture will be slightly runny.
Heat the oil: In a non-stick pan over medium heat, add vegetable oil.
Fry the fritters: Spoon 2–3 tablespoons of the mixture into the pan per fritter. Flatten slightly with the back of the spoon. Fry 2–3 minutes per side until golden brown.
Garnish and serve: Sprinkle sesame seeds on top if desired. Serve warm.
