Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Fry the diced potatoes until golden and tender (about 10–12 minutes).
Add Onion & Ham: Add the chopped onion and cook until soft. Stir in the ham pieces and sauté for another 2–3 minutes.
Season: Sprinkle salt and black pepper to taste.
Prepare the Eggs: In a large bowl, whisk the eggs with a pinch of salt.
Combine & Cook: Lower the heat, pour the eggs over the potato mixture in the pan. Let it cook gently, tilting the pan to distribute evenly.
Add Cheese: Once the edges start to set, sprinkle grated cheddar on top.
Finish Cooking: Cover the pan with a lid and cook on low for 5–6 minutes until fully set. You can also place under a broiler for a golden top.
Serve: Slice and serve warm.
