One-Pan Garlic Herb Chicken with Potatoes & Green Beans

Preheat your oven to 200°C (392°F). Line a large baking tray with parchment paper or lightly grease it.

Season Chicken:
In a small bowl, mix 2 tbsp olive oil, garlic powder, oregano, salt, and pepper. Rub this mixture evenly over the chicken breasts.

Prepare Vegetables:
Toss the halved potatoes in 1 tbsp olive oil, salt, and pepper. Spread them on the tray and roast for 15 minutes.

Add Chicken and Green Beans:
Remove the tray, push potatoes to one side. Add the seasoned chicken and green beans. Return to the oven for another 20–25 minutes, or until chicken is cooked through and potatoes are golden.

Serve:
Plate the chicken with vegetables and garnish with lemon zest or a squeeze of lemon juice if desired.
