Old-Fashioned Boiled Raisin Spice Cake

In a saucepan, bring the water and raisins to a boil. Simmer for 10 minutes, then remove from heat.

Add Oil:
Stir in the vegetable oil and let the mixture cool for about 10 minutes.

Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch baking pan.

Mix Dry Ingredients:
In a large bowl, whisk together flour, sugar, pumpkin pie spice, baking soda, and salt.

Combine Wet and Dry:
Pour the cooled raisin mixture into the dry ingredients. Stir until just combined.

Bake:
Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve:
Let the cake cool in the pan before slicing.
