Preheat your oven to 180°C (350°F).
Grease a muffin tin lightly with oil or cooking spray.
Add a small amount of diced onion, bell pepper, and bacon (if using) to each muffin cup.
In a mixing bowl, whisk the eggs with milk, salt, and pepper.
Pour the egg mixture into each muffin cup until almost full.
Bake for 20–25 minutes or until the muffins are set and golden on top.
Let cool for a few minutes before removing and serving.
