Fajita Chicken Casserole

Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.

In a skillet, heat olive oil over medium heat. Add chicken and cook until no longer pink. Add fajita seasoning and stir to coat. Set aside.

In the same skillet, sauté the bell peppers and onion until soft and lightly charred.

In a bowl, mix sour cream, cream cheese, garlic powder, onion powder, salt, and pepper until smooth.

Add the chicken and sautéed vegetables to the bowl. Mix everything well.

Pour into the prepared baking dish and top with shredded cheeses.

Bake for 20–25 minutes or until golden and bubbling.

Let rest 5 minutes before serving. Garnish with chopped cilantro if desired.
