Make the Sauce: In a bowl, whisk together honey, minced garlic, soy sauce, ketchup, and oregano until smooth.
Layer the Ingredients: In a 4–6 quart slow cooker, place chicken thighs on the bottom. Add potatoes, carrots, and onions over the chicken.
Add the Sauce: Pour the honey garlic mixture evenly over all ingredients.
Cook:
On LOW for 6–8 hours
Or HIGH for 3–3.5 hours
Add Green Beans: About 20 minutes before serving, add the trimmed green beans to the slow cooker and stir gently.
Optional Thickening: If you prefer a thicker sauce, mix cornstarch and water in a small bowl and stir it into the slow cooker. Let it cook uncovered for 10 minutes to thicken slightly.
Serve: Garnish with fresh parsley if desired. Serve hot.
