Soak the dates in warm water for 10 minutes if they are dry. Drain and pat dry.
Process the Mixture:
In a food processor, blend the dates, nuts, chia seeds, salt, vanilla, and nut butter until the mixture is crumbly but sticky. Add cocoa powder if using.
Form the Bars:
Line a small baking dish with parchment paper. Press the mixture evenly into the dish, using a spatula or your hands.
Chill:
Refrigerate for at least 1 hour to firm up.
Slice and Serve:
Cut into bars or squares and enjoy!
