In a bowl, mix cream cheese with sour cream (or yogurt), lemon juice, chives, salt, and pepper until smooth and creamy.
Assemble the Verrines:
Spoon a layer of the cream cheese mixture into the bottom of each glass.
Add a layer of chopped smoked salmon.
Add a layer of shrimp.
Repeat if using larger glasses or for visual layering.
Chill:
Place the verrines in the fridge for at least 30 minutes before serving.
Garnish:
Top with extra chives, a shrimp, lemon zest, or capers if desired.
