Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Beat the eggs in a large bowl until light and fluffy (about 2–3 minutes).
Add sugar, oil, and vanilla extract. Mix well.
Sift in flour, baking powder, cinnamon, and nutmeg. Fold gently until just combined.
Spread the batter evenly into the prepared baking sheet.
Bake for 10–12 minutes, or until golden and a toothpick comes out clean.
Let it cool slightly, then roll in a clean towel (with parchment) to form a roll. Cool completely before filling with your favorite cream or jam.
