Prepare the yeast mixture:
In a small bowl, mix warm milk, sugar, and crumbled fresh yeast. Let sit for 5–10 minutes until bubbly.
Grate and drain potatoes:
Grate the potatoes finely and squeeze out excess water using a clean towel or cheesecloth.
Mix the batter:
In a large bowl, combine grated potatoes, the activated yeast mixture, egg, salt, pepper, and flour (if using). Stir until well blended.
Cook:
Heat a nonstick pan with a little oil or butter. Spoon the mixture in and flatten slightly. Cook over medium heat until golden brown on both sides (about 3–4 minutes per side).
Serve:
Serve hot with your favorite dip, sour cream, or as a side to eggs or salad.
