Prepare the Chicken:
Pat the chicken dry with paper towels. Season with salt and pepper if desired.
Layer the Ingredients:
Place half of the lemon slices at the bottom of the slow cooker. Stuff some slices and half of the garlic inside the chicken cavity. Place the chicken on top of the lemon slices. Spread the remaining garlic and lemon slices over and around the chicken.
Cook:
Cover and cook on low for 6–8 hours or high for 4–5 hours, until the chicken is fully cooked (internal temp should reach 165°F/74°C).
Optional Crisping Step:
For crispy skin, transfer the cooked chicken to a baking sheet and broil in the oven for 4–5 minutes.
