Preheat oven to 400°F (200°C). Wash the potatoes and pierce them with a fork. Bake directly on the oven rack for 45–50 minutes or until tender. Let cool slightly, then slice the tops and scoop out most of the flesh, leaving a shell.
2️⃣ Prepare the Filling:
In a skillet, heat olive oil over medium heat. Sauté onion until soft. Add ground beef, salt, pepper, and paprika. Cook until browned. Add diced bell pepper and carrot if using, and cook for 5 more minutes.
3️⃣ Mash & Mix:
Mash the scooped-out potato flesh in a bowl. Add the cooked meat mixture and half of the shredded cheese. Stir until combined.
4️⃣ Stuff & Bake:
Spoon the filling back into the potato shells. Top with the remaining cheese. Bake in the oven for 10–15 minutes until the cheese is melted and golden.
5️⃣ Garnish & Serve:
Sprinkle with chopped parsley and serve warm!
