In a large bowl, mix minced meat with chopped onion, parsley, egg, salt, pepper, and breadcrumbs if using.
Mix until combined and smooth.
2. Shape and Stuff:
Take a portion of the meat mixture, flatten it in your hand, place a cube of cheese in the center, and shape it into an oval cutlet around the filling.
Repeat with the remaining mixture.
3. Cook the Cutlets:
Heat oil in a skillet over medium heat.
Fry the cutlets on both sides until golden brown and cooked through (about 4–5 minutes per side).
Drain on paper towels.
4. Make the Mashed Potatoes:
Boil the potatoes in salted water until soft (about 15–20 minutes).
Drain and mash with butter and warm milk.
Season to taste with salt and pepper.
