Sourdough Discard Bacon & Caramelized Onion Twists

Make the Dough:
Mix sourdough discard, flour, sugar, salt, and yeast in a large bowl. Add oil and warm water. Stir until a soft dough forms. Knead for 5–7 minutes. Let rise in a warm place for about 1 hour until puffy.

Caramelize the Onion & Bacon:
While dough rises, heat butter in a skillet. Add onions, sugar, salt, and pepper. Cook over medium-low heat, stirring for 15–20 minutes until golden. Let cool, then stir in bacon and thyme (if using).

Assemble the Twists:
Roll dough into a 12x8 inch rectangle. Spread filling over half. Fold other half over and press to seal. Cut into 8 strips.

Twist & Proof:
Twist each strip and place on a parchment-lined tray. Let rest for 15 minutes while preheating air fryer or oven to 375°F (190°C).

Air Fry or Bake:
Brush with egg wash and sprinkle with seeds. Air fry for 8–10 min or bake for 15–18 min until golden brown and crispy.

Serve:
Cool slightly and enjoy warm—be cautious, the filling will be hot!
