Pat the pork steaks dry with a paper towel and season generously with salt, pepper, and oregano.
Lightly coat each steak in flour on both sides, shaking off excess.
Heat olive oil in a large skillet over medium-high heat.
Sear the pork steaks on both sides until golden brown, about 3-4 minutes per side.
Once seared, remove the steaks and set aside.
In the same skillet, deglaze with a splash of water or stock, scraping up the browned bits to form a sauce.
Return the pork to the skillet, cover, and let simmer gently for 10 minutes, or until fully cooked and tender.
Serve hot, spooning the pan sauce over the steaks.
