Mix crushed cookies with melted butter and press a layer into the bottom of individual glasses. Set aside.

In a bowl, beat mascarpone, sugar, eggs, lemon juice and zest, vanilla sugar, and a pinch of salt until creamy and smooth.

Spoon the mascarpone mixture over the cookie base in the glasses.

Top with fresh mixed berries.

Refrigerate for at least 2 hours to set.

Garnish with mint or whipped cream before serving, if desired.
