In a large bowl, mix the water and yeast. Let sit for 5 minutes.
Add salt, flour, and olive oil. Mix until a dough forms.
Knead the dough for 10 minutes until smooth and elastic.
Cover and let rise in a warm place for 1 hour or until doubled in size.
Punch down the dough, knead in the grated cheese (and herbs if using).
Shape into a loaf or small rolls and place on a lined baking tray.
Let rest for 20–30 minutes while preheating the oven to 200°C (390°F).
Bake for 25–30 minutes or until golden brown.
Let cool slightly before slicing.
