In a large bowl, mix flour, semolina, yeast, sugar, and salt. Add olive oil and gradually add lukewarm water, kneading until a soft dough forms. Knead for 8–10 minutes until smooth and elastic. Cover and let rise in a warm place for 1 hour.
Prepare the Chicken Filling:
Heat olive oil in a pan. Sauté onion and garlic until soft. Add shredded chicken, paprika, cumin, salt, and pepper. Stir for 2–3 minutes until well combined. Mix in parsley if using, then let the mixture cool.
