Preheat your oven to 180°C (350°F). Grease a tart or pie tin.

Crush the biscuits into fine crumbs (using a food processor or rolling pin), and mix with the melted butter. Press the mixture firmly into the base of your tin to form an even crust.
Prepare the Filling:
In a large bowl, whisk the mascarpone, sugar, eggs, lemon juice, lemon zest, vanilla sugar, and a pinch of salt until smooth and creamy.
Assemble the Pie:
Pour the filling over the crust and smooth the top.
Bake:
Bake for 25–30 minutes, or until the center is just set and slightly golden at the edges.
Cool and Serve:
Let the pie cool completely before serving. Refrigerate for at least 2 hours for best texture.
