Introduction:
Soup dumplings, or xiao long bao, are tender dumplings filled with flavorful broth and meat. These bite-sized parcels of comfort are surprisingly fun to make at home—and even more satisfying to eat!
Ingredients:
For the Dough:
2 cups (250 g) all-purpose flour
¾ cup (180 ml) hot water
1 tbsp vegetable oil
Pinch of salt
For the Filling:
1 lb (450 g) ground pork (or chicken/turkey/tofu)
¼ cup finely chopped scallions
1 tbsp soy sauce
1 tbsp sesame oil
1 tsp grated ginger
1 garlic clove, minced
Salt and pepper, to taste
For the Soup Gelatin (Aspic):
2 cups chicken or pork broth
1 tbsp unflavored gelatin
1 tbsp soy sauce
