Preheat the oven to 200°C (392°F). Line a baking tray with parchment paper.
In a pan, cook the minced meat with onion, salt, pepper, and water until fully browned and moisture evaporates. Let it cool.
Stir in the grated cheddar cheese.
Roll out the puff pastry and cut into squares. Place a spoonful of meat mixture in the center of each square and fold into triangles or pockets. Seal the edges with a fork.
Brush the tops with a beaten egg.
Bake for 20–25 minutes, or until golden brown and puffed.
Meanwhile, mix the yogurt sauce: combine yogurt, minced garlic, parsley, olive oil, and salt in a bowl. Stir until smooth.
Serve the warm meat pastries with a side of garlic yogurt sauce for dipping.
