In a large bowl, mix flour and salt. Add melted or softened butter and warm water. Knead until smooth and elastic (8–10 minutes). Cover and let it rest for 30 minutes.
Prepare the Spinach Filling:
Wash and chop the spinach. Sauté lightly in a pan (no oil needed) just until wilted. Add salt and pepper, then let cool.
Roll and Fill:
Divide the dough into equal balls. Roll each into a thin rectangle. Place a spoonful of spinach filling on one half, fold over, and seal the edges by pressing with a fork.
Bake:
Preheat oven to 200°C (390°F). Place pastries on a baking tray lined with parchment paper. Brush with a little butter or egg wash (optional). Bake for 20–25 minutes until golden and crisp.
