Golden Veggie Egg Bake: Better Than Meat, Bursting with Flavor

Preheat oven to 180°C (350°F).

In a skillet, heat olive oil and sauté the onion, carrot, and pepper until soft.

Add garlic and tomatoes, cooking for 2–3 minutes.

Stir in sweet paprika, salt, and black pepper.

In a greased baking dish, layer the thinly sliced potatoes.

Spread the sautéed vegetable mixture over the potatoes.

Whisk the eggs and mix with ricotta, then pour evenly over the vegetables.

Dot with butter and sprinkle mozzarella on top.

Bake for 30 minutes or until golden and bubbly.

Garnish with fresh parsley before serving.
