Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a skillet over medium heat, cook sausage until browned. Leave 1–2 tbsp of fat in the pan.
Add butter to the pan. Once melted, stir in flour and cook for 1 minute.
Gradually whisk in warm milk. Stir constantly until thickened (5–7 minutes).
Season with salt, pepper, and garlic powder. Let the gravy cool slightly.
Roll out puff pastry slightly on a floured surface. Cut into two equal rectangles.
Place one sheet on the baking tray. Spread sausage gravy on top, leaving a ½-inch border.
Cover with the second pastry sheet. Seal edges with a fork. Cut a few slits in the top.
Beat egg with 1 tbsp water and brush over the crust.
Bake for 20–25 minutes or until golden and puffed.
Cool slightly, slice, and garnish with parsley if desired.
