Famous Italian Lemon Cake (Soft and Melting!)

Preheat your oven to 170°C (340°F). Grease and flour a loaf pan or round cake tin.

In a large bowl, beat the eggs, sugar, and pinch of salt until light and fluffy (3–4 minutes).

Add yogurt, oil, lemon zest, and juice. Mix gently until combined.

Sift in the flour and baking powder. Fold gently until smooth and lump-free.

Pour the batter into the prepared pan and smooth the top.

Bake for 35–40 minutes, or until a toothpick inserted comes out clean.

Let cool, then dust with powdered sugar or drizzle with lemon glaze before serving.
