Preheat your oven to 180°C (350°F).
Heat oil in a pan, sauté onion and garlic until fragrant. Add spinach and cook until wilted. Set aside.
In a large bowl, mix grated potatoes, egg, salt, pepper, and nutmeg.
Stir in the cooked spinach mixture and half of the Parmesan cheese.
Transfer to a lightly greased baking dish. Sprinkle remaining Parmesan, mozzarella, and breadcrumbs on top.
Bake for 25–30 minutes or until golden and crisp on top.
Let rest for a few minutes before serving.
