In a bowl, mix flour and salt. Gradually add water and mix until a dough forms. Knead for 5–7 minutes until smooth. Cover and let rest 20 minutes.
Prepare the Filling:
Heat oil in a pan. Sauté onions until golden. Add herbs, salt, and pepper. Let cool.
Divide & Fill:
Divide dough into 4 balls. Roll each out thinly. Place filling on one side, fold over, and seal edges.
Cook the Flatbreads:
Heat a nonstick pan. Brush lightly with oil. Cook each flatbread 2–3 minutes per side until golden and crispy.
Serve:
Serve warm with yogurt dip, chili sauce, or enjoy on its own.
