Crispy Lentil Schnitzels – Better Than Meat!

Rinse the lentils and cook in 450 ml water until soft and water is absorbed (about 15–20 minutes). Let them cool slightly.

2️⃣ Prepare the Mix:
In a large bowl, combine cooked lentils, grated zucchini (squeeze out excess moisture), onion, garlic, sun-dried tomatoes, olive paste, spices, and salt.

3️⃣ Add the Flour:
Mix in the flour until a thick, moldable dough forms. If it's too wet, add a bit more flour.

4️⃣ Form the Schnitzels:
Shape the mixture into patties or schnitzel shapes (about 1 cm thick).

5️⃣ Fry Until Crispy:
Heat vegetable oil in a non-stick skillet over medium heat. Fry patties on both sides until golden and crispy (about 3–4 minutes per side).
